Pear and Cardamom Sorbet Recipe
 
Break out the ice cream maker for this Pear and Cardamom Sorbet recipe. It makes 6 servings. This recipe originally appeared in the November 2001 issue of Gourmet.

Ingredients
• 2 (11.5-oz.) cans pear nectar
• 6 tablespoons superfine granulated sugar
• 1/8 teaspoon ground cardamom
• 2 teaspoons fresh lemon juice

How to Mix It
1. Add 1/2 cup pear nectar, sugar and cardamom to a small saucepan and bring to a simmer.

2. Simmer, stirring, just until sugar is dissolved.

3. Place remaining pear nectar in a bowl, then add heated ingredients plus lemon juice to bowl. Stir.

4. Transfer to ice cream maker and freeze according to your maker's instructions.

Serving suggestion: Serve this sorbet over pear halves or alongside sliced pears tosses with lemon juice.
