Pear Rosemary Cocktail Recipe

This Pear Rosemary Cocktail recipe makes 8 servings.
Ingredients
6 Seckel pears
4 cups vodka
1 cup sugar
12 sprigs fresh rosemary (set aside more for garnish)
1 1/2 cups pear nectar
4 cups sparkling water
How to Mix It
1. Get a 48-ounce, resealable jar and fill with as many pears as you can fit.
2. Add vodka and seal jar.
3. Let jar stand at room temperature for at least two weeks and up to two months. This is your homemade pear nectar.
4. When ready to make cocktails, heat sugar and 1 cup water in a medium saucepan over medium-high heat. Stir until sugar has dissolved.
5. Add rosemary and remove from heat. Let stand 30 minutes.
6. Remove rosemary sprigs and discard. Let liquid keep sitting until completely cooled. This is your simple syrup.
7. Using 12-oz. glasses, fill eight halfway with ice.
8. Add to each glass 4 tablespoons vodka, 2 tablespoons simple syrup and 3 tablespoons pear nectar.
9. Top each with 1/2 cup sparkling water.
10. Serve garnished with rosemary sprigs.
