Autumn Pear and Pumpkin Soup Recipe
 
This Autumn Pear and Pumpkin Soup recipe makes 6 servings. It was originally published in Better Homes & Gardens magazine.

Ingredients
• 1/2 cup chopped onion
• 1/2 cup water
• 2 teaspoons instant chicken bouillon granules
• 1 (15-oz.) can pumpkin
• 2 1/2 cups half-and-half
• 1 3/4 cups pear nectar
• 1/4 teaspoon ground ginger
• 1/4 teaspoon white pepper
• Pear slices for garnish (optional)

Preparation
1. In a large saucepan combine onion, water, and bouillon granules.

2. Bring to a boil, reduce heat and simmer, covered, about 10 minutes or until onion is very tender.

3. Allow onion mixture to cool slightly, but do not drain.

4. Transfer mixture to blender or food processor and add pumpkin. Cover and blend until smooth.

5. Return pumpkin mixture to saucepan.

6. Add half-and-half, pear nectar, ginger, and white pepper and stir.

7. Cook and stir until heated through. Ladle into soup bowls. If desired, garnish each serving with pear slices.
